Marie-Nöelle Rainon-Henriet helms one of the great family-owned domaines in Champagne, and her chalky, almost saline Blanc de Blancs hails from one of the great sites at the southeastern base of the Montagne de Reims, Villers-Marmery, where only the Chardonnay (because of the extremely chalky soils) is afforded 1er Cru status. Vines are between 35-55 years old, and the base wines go through complete malolactic fermentation. Sustainable farming.
