Here's a rosé from the very northern part of Burgundy's Côte de Nuits that's one of the rare pink wines that will develop in complexity with aging. However, we don't have the discipline to age it, and we suspect you won't be able to, either. The massive structure and concentration here are offset by intense and almost overwhelming aromas and flavors of fraise, framboise and rose hips. It's the kind of rosé that belongs on your table year-round, and it's perfect for big holiday celebrations...especially Thanksgiving and Christmas.
