The family firm of Louis Métaireau is one of the few remaining in Muscadet to do things the old-fashioned way: hand harvesting of very old vines (in this cuvée, vine age is between 30-50 years), plenty of time for the wine to rest on the lees in glass-lined tanks and gentle gravity transfer of the wines, with no pumping or filtration. The result is predictably spectacular: a rich, mineral and concentrated elixir that simply demands the finest seafood and shellfish.
