The Premier Cru village of Trois Puits, just outside Reims, on the Montagne, is home to the tiny, extraordinary firm of Pierre Baillette. The wines are made by Pierre's daughter, Périne (who also happens to be the wife of Alexandre Chartogne!) in small, painstaking quantities. The "Le Village" cuvée, of which only 1,000 bottles were made, hails from old vines planted in chalk that enjoy a southern exposure; not surprisingly, Périne works to create a rich, oxidative quality in her wines (much like Chartogne-Taillet) by employing 30% wines from a solera started in 2002, and the dosage is kept to a bare minimum. Like all TFWR Champagnes, we encourage you to serve this in full-sized wine glasses and to treat it much like a table wine. Grower Champagne doesn't get more authentic- or better- than this!
