The Côte de Beaune "pocket valley" just over the hill from Chassagne and Puligny has become a treasure trove full of spectacular Burgundy (at great prices) for those who know where to look. And one of the best places is the town at the end of that valley, Saint-Romain, where Christophe Buisson fashions his organic, fraise-scented Pinot Noir in the most non-interventionist way possible, eschewing pumpovers and using gravity to rack his wines.
