Here's a spritz made with ratafia-style Cassis, lightly infused with botanicals and honey. Rachael Petach's extraordinary Hudson Valley firm has singlehandedly revived blackcurrant infusions (blackcurrant cultivation was actually prohibited in the 20th century, as the plants threatened white pine growths), and this mildly-strong (5.4% abv) mix of C. Cassis and seltzer is a great anytime refreshment.
