Johannes and Katherine Davaz constantly push the envelope of quality and innovation at their breathtaking western Chianti Classico estate in Val di Pesa. Here, Sangiovese from high altitude vineyards is quickly direct-pressed off the skins (no color!) and vinified in a fresh, modern manner. However, what's in the glass is anything but simple; although it's refreshing and bright, there's a sophisticated salinity, complex fruit and refined texture that is 100% down to the superb quality of that high-altitude Sangiovese.
