Here's a superbly balanced walnut liqueur from our friends at Faccia Bruto. They perfectly juggle the bitter, sweet, savory elements of this particularly difficult-to-make liqueur by using foraged and perfectly fresh green walnuts (they come from the Pacific Northwest's Foraged & Found), macerated in tiny batches for three weeks in non-GMO neutral grain spirit containing citrus peel, allspice, vanilla, and roasted dandelion root. A year in barrel follows, then it's sweetened with cane sugar and bottled. What a treat...and it's right on the level of the top walnut liqueurs of Western Europe!
