Cataratto gets a whole new treatment here, befitting the Il Censo partnership between vineyard owner Gaetano Gargano and star winemaker Giampiero Bea. The grapes are macerated 2-3 weeks on the skins and then fermented by native, airborne yeasts to yield a golden-orange elixir redolent of tropical fruits and sea spray. Exceptional!
