
This Madeira is produced from the Sercial grape, which typically gives the driest of all the fortified wines of this special island. Bartholomew Broadbent has taken over from his late father, Michael, and selects only properly-aged cuvées (lesser producers often artificially heat their barrel rooms to hasten the "cooked" quality of Madeira) for inclusion in his 10 year bottling. Substitute this for Fino or Amontillado Sherry for an fun, interesting change of pace.
