Perhaps no community in Western Europe knows more about wines that beat the heat than the folks who live in Andalucia, home of Sherry. Blazing heat on the daily actually plays a part in the barrel-aging of these everyday masterpieces...yet the dry (Fino and Manzanilla) versions are perhaps the most thirst-slaking and appropriate examples of what to drink when you don't even want to turn on the stove...and turn to bowls of salted almonds, marconas, olives, tartares and cheeses for dinner. And possibly the best Fino expressions of Sherry hail from the famous Macharnudo vineyard, which the firm of Valdespino exploits for their "Ynocente" bottling. It's bracing, nutty, ripping with acids and endlessly complex.
