Volnay specialists François and Vincent Bitouzet also make a fantastic Beaune from a small plot of 30-40 year-old vines in Central-Vignes. It’s appropriately Beaune-ish, with cherry-raspberry overtones, but the remarkable feature here is how the obsessive attention to detail for which they’re famous translates to the glass with sophisticated textures and the cool, balanced signature of the extraordinary 2021 vintage.
