We've always admired the Pommier Chablis for their restraint and pinpoint precision in capturing the special qualities of their varied terroirs. The 2021 Côte de Léchet is a benchmark for this "throwback" vintage, with the concentration one would expect from 60 year-old vines and the extremely limited yields. It is texturally perfect and probably a good candidate for aging...if you have the iron discipline to not drink them all right away!
