This is old-fashioned Listrac, in that the Thomas family has always added a significant portion of Petit Verdot to the grand vin of the estate. Although it's an uneven ripener and must be picked in multiple passes, the Verdot adds aromatic complexity and lowers the pH of the finished wine.
