For near-term drinking, the pink wines of Coteaux d'Aix-en-Provence are, to our taste, the very best in Provence. And in the right hands (and Domaine Val de Caire qualifies as that!), Grenache, Cinsault and Syrah from these limestone hillsides give a wine of immediate pleasure, with precise aromatics of cherry, strawberry and watermelon, balanced by a filigreed acidity and long, dry, complex finish. Bring on the bouillabaisse! Organic.
