Dominique Boulard's top cuvée, the Singularis, is a Rosé Champagne of exquisite savor and detail. Fashioned from 50% each of Pinots Noir and Meunier (from both the Vallée de la Marne and Montagne de Reims), the 2013 edition spent ten years on the lees, and 1,000 bottles were produced. It's announced by a strikingly dark color and displays aromas and flavors of mushroom, dusky Pinot fruit and just the tiniest hint of attractive reduction. It seems that Boulard intends this to be used as a table wine, and it's certainly got the heft to accompany any number of meatier fish, top-quality sashimi or even a loin of venison. It's a striking and compelling Champagne that commands the drinker's full attention.
