
Moutard's zippy, classy, brioche-scented non-vintage Champagne hails from the Côte des Bar in the Aube, the southeastern part of the region. And we love the Côte des Bar for a couple of reasons, the first of which is value, and the second being that unlike the rest of Champagne, with has chalk subsoils, all the districts of the Aube have Kimmeridgian limestone subsoils (just like its close neighbor, Chablis!). There's a fine, electric structure to this wine that's very much Champagne, yet utterly distinctive and identifiable. Sustainable viticulture.
