To our taste, Josko Gravner's wines are the ultimate in the category that's come to be known as "natural". His Rosso is a Cabernet Sauvignon/Merlot blend, fermented in buried qvivri, given long aging in neutral oak, then bottled unfined and unfiltered. Even though it's been denied the DOC, it's as Friulian as it can possibly be and demands service with a ribollita, braised game, broad beans & spelt or any other classic northeastern Italian dish.
