Steve Shaw's exquisite estate Cabernet Sauvignon- drawn from his vineyards in the Dresden Shale (the central-western side of Seneca Lake)- is given Shaw's traditional five years in barrel and shows more like a classic old Bordeaux than anything you might identify as a Finger Lakes red. Superb!
