The tiny appellation of Valdejalón sits at 400-1,300 meters near the city of Zaragoza and is one of the great spots in Spain for the crafting of top-class Garnacha. The vines here are old and constantly exposed to winds the locals call Cierzo, which stresses the ancient vines to constantly pump mineral-rich water up through their root systems, resulting in Garnacha that displays aromas and flavors of raspberry, incense, salvia and white pepper. Only a tiny addition of sulfur is added before bottling. Organic and biodynamic.
